The World That Was - Savoury Hittite Porridge

Hello and Welcome to The World That Was! This week, I'll be taking a quick look at a dish from the Hittites - a stew known from Assyrian sources as "a broth of pulses". Since this is a very vague description (even by bronze age source standards), I'll be basing my version off of with what we know about Hittite eating habits! The World That Was - Hittite Fried Apple Bread

Hello and Welcome to The World That Was! Today, I'll be making another Hittite dish called "fried bread with apples". One of the universal staples of humanity is fried dough, and this is how I'll be interpreting the dish here - as lumps of fried batter with chunks of apple! Since we don't know how fried bread with apple actually was, this is taking a lot of notes from later Greek “tageientes”, and modern apple fritters. The World That Was - Savoury Hittite Applesauce

Hello and Welcome to The World That Was Today, I'll be making a recipe based on fragmentary records of Hittite banquets. The Hittites were a population (and empire) located in Turkey, Syria, and Northern Mesopotamia, around the 14th millennium BC! This is a savoury applesauce, in contrast to sweet applesauce that is common today. As the recipe is based on only a few fragmentary ingredients, we'll have to take a few educated guesses. Let's take a look at The World That Was! Follow along with my YouTube recipe above! Ingredients: 1 onion (finely sliced) 3 apples (peeled, cored, and chopped) 2 tablespoons butter 1 teaspoon marjoram/oregano (or za'atar, if you have it) 120ml / 1/2 cup water  Method 1 - Prepare the Apples To begin making this applesauce, we need to start with apples.
